no bake cookies {with homemade almond butter}

 

After trying making almond butter in the vitamix I decided to try making no bake cookies with them…

No Bake Fudgy Oatmeal Cookies {with almond butter}

2 cups sugar {I used 1/2 cup maple syrup}

1/2 cup milk

1/4 lb. butter {I used 1/2 cup coconut oil}

3 T. raw cacao

1/4 tsp. salt

1/2 cup almond butter

3 cups oats

1 tsp. vanilla

Note: They didn’t turn out quite as firm as regular no-bake cookies I’ve had before…could be because I used maple syrup instead of sugar???

Yummy even to eat with a spoon…but firm enough to hold together, too!

Flatbread {homemade}

Alexis and I tried making flatbread today…

it was a delicious success!

Flatbread

About 6 cups of hard white whole wheat flour

About 1 1/2 cups of cracked grains (I “cracked” some 7 Grain blend in the Vitamix which I think consisted of whole grain wheat, rye, oats, triticale, barley, brown rice, oat bran and flaxseed)

*If you do not like texture, you might just use flour instead of the cracked grains as they definitely add a bit of a “nutty” crunch.

2 Tablespoons of celtic sea salt

2 packets of yeast

4 cups lukewarm water

(optional: about a tablespoon of honey to help the yeast, though the recipe I was given did not call for it)

I mixed it all together and heated some coconut oil in a skillet, scooped out a hunk of dough (which already seemed somewhat “yeasty” without rising any to speak of), floured it in some more flour with a homemade unmeasured 🙂 herb blend of {granulated garlic, dried rosemary, dehydrated onions, and Bragg’s herb seasoning blend} and then “fried” it in the skillet.

I sprinkled extra salt and some black pepper on the flatbread to serve.
